What? Me cook?

I know we have some wonderful cooks out here. I am not one of you. But for those who are do you have any easy, let me repeat that EASY vegetarian recipe I could use for Christmas when Colin is here? I’ll be serving meat too, but I want to make something special for him. He’s not vegan, but no meat at all.


I always read the recipe you post, the one Cat has today for eggnog was the one that got me thinking about this, but my true feelings about cooking in general can is best expressed this way.

  1. LOL! I love that! I have tons of vegetarian recipes. However I usually just read recipes then create...so I will look in my books since I am not exactly a cook who follows the guidelines.

  2. LOL. Good picture. Minelle is the vegetarian queen. She can't follow rules, though, so she'll probably explain it like this:

    I add enough water to fill my pot 3/4 full unless my big one is being used, and then I use my other one.
    Then I add whatever vegetable is in my fridge. Maybe some onion. You'll know when it's enough.
    Then I put in a bunch more things, and it's delicious!

    Seriously. I tried to follow a Minelle recipe once.

  3. I used to cook and I like cooking but anymore if it has more than 5 steps or 5 ingredients, I use your sign. I never followed a recipe that I didn't change somewhere along the line.

    Linquine with Clam Sauce

    very large can of clams - drain reserving some juice. Saute garlic in butter or olive oil, add reserved clam juice, 1/2 & 1/2, clams. Warm til blended. Serve over linguine, add sprinkles of parsley and grated parm cheese.

    Quick, easy, 5 ingredients and delish.

    2. Now this one sounds like I could possibly manage it, but I'm guessing Colin doesn't eat clams. I might try this one for us. Of course, Nick might faint dead away.

  4. LOL I love your sign, PK! :) What about something like eggplant parm- layered like lasagna or something? If that interests you, let me know. It could be a side, but also a main. Rob has a recipe that he uses, though like Minelle cooks- he wings it! It is yummy! I'll get him to dictate if you want.

    I cooked for years, but Rob LOVES to cook. He is creative and I just follow recipes exactly pretty much. Yeah I like order. LOL! I mostly just sit back and enjoy the food these days. :) Many hugs,

    1. Nick does our cooking around here about 90% of the time. That's way fine by me! Thank goodness Mollie's a pretty good cook too. But our kitchen is tiny and after she cooks it's like a hurricane hit.

      I'd love the recipe if it's truly easy, otherwise...

  5. Sending you two recipes - both very easy - and two starters as well.

    Starters: Roasted Red Peppers stuffed with tomatoes and garlic, served with Quick Cheese, Sage and Onion Bread

    Terrine of Four Cheeses, served with Spiced Apricot and Orange Chutney and Warm Walnut and Raisin Bread

    Main Courses: Caramelised Cheese and Onion Tartlets with Cranberry and Orange Relish, served with Broccoli Salad with Sesame Dressing

    Cheese and Parsnip Roulade with Sage and Onion Stuffing, served with Bread Sauce or Cranberry and Orange Relish

    Believe me, these are all very easy - the instructions are easy to follow and they look very spectacular. You can also just do the main recipe in each case, and add your own accompaniments if you wish.

    1. Oh Ami! You have vastly underestimated my inability to cook. I have trouble with - open can, pour into sauce pan, heat. But I'll let Mollie look at these and see what she thinks. Wish you were closer - I'd hire you.

  6. Love the sign PK...I do feel that way about some recipes I read.

    Before I go sending any recipes, I have a few questions for you:
    1. Is this for a sit down dinner or buffet?
    2. What style of meal are you serving? For example: not sure you really would want Italian if the rest of the meal is southern.
    3. Does Colin eat seafood?
    4. Does Colin have a favorite veggie?
    5. How many people are you planning to serve? Even if it is for Colin, you want enough for everyone. ;)

    I do believe Ami is the best cook in the group so her recipes are wonderful but if you want some more recipes, just let me know the answer to the above questions and I will get some in the mail.
    Many of my recipes are ones I have thrown together but when I have to write them out for the boys or other family members, I have to sorta measure everything. Also, it may look like more steps to some of mine but I break all steps down to one action each.

    My daughter in law is vegan also. Usually what I do, Is when I make stuffing I make a little on the side that does not have turkey juices, or meat in it, I make 3 or 4 veggies instead of just 1 or 2 and I go to the organic section of grocery store, and get a vegan ham, or turkey loaf that I make just for her. Then she is still having most of what everyone else is. No muss no fuss. Nothing hard. The loaf or ham can be put in the oven along with the other stuff your making.

      Those are some good ideas. I can make plain veggie - although I usually season with meat, I can restrain myself. We live in a pretty small town, but I'll start looking around to see if anyone carries vegan ham or turkey.

  9. I love this banana bread, it's no grain, and it takes five minutes to make aside from baking. http://detoxinista.com/2012/08/flourless-peanut-butter-banana-muffins/

    I also love to make a soup with a bag of baby carrots, 6-8 lengths of celery chopped, one turnip cubed, with a box and a half to two boxes of broth. Then I add tbsp of marjoram, tbsp of Thyme, 2 tbsp of ground pepper, and tbsp of Rosemary. Then I just let it boil on low until the carrots and turnip are soft. It keeps well in the fridge for at least a week.

    Not sure either of those will help, but thought I'd offer up some choices, and I find those are two no fail recipes.

    My two sisters, brother-in-law, and cousin are all vegetarians so I know what it's like. Try this vegetarian stuffing (you can use veggie bouillon instead of chicken broth): http://www.chatelaine.com/recipe/thanksgiving/old-fashioned-bread-stuffing/ Adding some dried cranberries adds a nice touch.

    Sweet potato casserole/mashed sweet potatoes with a brown sugar and pecan topping are always a hit with my family. Of course, regular mashed potatoes are good too. Sub regular gravy with mushroom gravy. You can find packets at the grocery store.

    There is such a thing as "tofurkey", which is basically faux turkey. It's generally made from tofu. You can usually purchase it ready-made and then just oven roast/bake it.

    Of course, there are lots of veggies you can prepare - green beans, beets, corn, salad, whatever you like. Tofurkey, veggie stuffing, sweet/regular mashed potatoes, assorted veggies and some fresh rolls should give him lots of options. :)

    1. Sammy, it does and I thank you. Talked to LJ tonight and he said that for Thanksgiving their friend thought she was getting tofurkey but it turned out to be plain tofu shaped like a turkey - really bad they said, LOL! I'm trying to be a good MIL, but this is a little tough.

  11. Hey PK...No matter what you decide to make, just a few things to keep in mind...most of the tofurkey and tofam are nothing but shaped tofu which is flavorless. Most of the 'vegetarian' food in the grocery store is sorta like the 'McDonalds' of vegetarian. Some of the vegetarian food is heavy on wheat/gluten to hold it together so you need to make sure that Colin isn't gluten intolerant or gluten sensitive.

  12. I like Cat's questions....but for now some quick ideas
    -soup...some sort of vegetable soup or I have a butternut squash and apple soup we really like
    -veggie and bean chili
    -stuffed peppers with rice, tomatoes, and cheese, and spices
    -mini egg frittatas
    -vegetable stir fry over rice
    -broccolli and grape salad with almonds
    -twice baked potatoes (with brocolli, cheese, ranch dressing...)

    Not much help on the vegetarian front. Ami's recipes sound great or you could go to a deli (if you have one near) and buy something but I know to make is yourself would be special.

  18. PK, Hi. I am a pescatarian (I eat some fish) and I enjoy cooking. I emailed you a really great vegetarian dish that I have made a couple of times. It was well received by my vegetarian diners as well as the carnivore's! I promise you it is a winner!

    You know, I just thought, here is am sharing recipes....everyone may begin wondering if I really am a guy. LOL Oh well, I am too old to worry about that! I like what I like and I am what I am!
